Fall Dinner Ideas
Need some new ideas for Fall Dinners? Now that Back to School is in full swing, and we have our new routines, we might be getting tired of resorting to mac and cheese and chicken nuggets (even if the kids are not). Check out some of these dinner concepts and see if any of them spark an idea as you begin your meal plans for the week.
Make a big pot of soup.
Big pots of soup are quite easy! Start with a recipe, or just saute some onions, carrots, and garlic, then add whatever veggies and meat you have on hand. Consider chilis, noodle soups, stews, gumbos, and more. Have toppings and garnishes to add freshness and crunch, and you can feed a crowd with one pot. Freeze leftovers and have lunch planned for next week, or double the pot and swap portions with friends at a soup swap. With all sorts of cuisine options, you can taste the whole world and try new flavors.
Make a charcuterie board.
Picky eaters will love the ability to choose what they want off the board (or big plate, or even use a cutting board). Pick an assortment of cooked meats, cheeses, crackers, fruits, nuts and more and enjoy snacking for dinner. Maybe use up some leftover chicken, or those berries that need to be eaten ASAP. You don’t have to cook, and there will be no pots and pans to clean up after. Feel free to pick a theme and have some fall colors or flavors there. Either way, it’s an easy dinner for a busy weeknight. Adults can have a glass of wine and it’ll feel fancy! We did this cookbook for my club one month and it was a huge hit! We all brought a different board to share and it was all yummy.
Sheet Pan Meals
These are pretty easy! You chop stuff up (or buy it pre-chopped and keep it simple) and toss it with some oil and roast in your oven until it’s done. One pan, less mess, and no standing over the stove. You can put a bunch of veggies on the sheet pan and let them get roasted and delicious, plus it’s easy for a group or meal prepping. Add some rice or a salad on the side if you need it, and dinner is ready before you know it. Pick up a book of recipes, or look online and you’ll find something that matches your fancy. You can even buy sheet pan meals in your freezer section, which are great to leave with the babysitter!
